sick day {again.}

we are having another sick day over here. 
i am not sure what the deal is with us getting sick so often.

we had to run to target to get some cold meds for me and some stuff to make dinner for community group {i am making this soup} 
i got maggie out of the car and put her in the cart. 
she sat down and snuggled herself into the seat like this:
i felt like the worlds worst mama taking this girl to the store, but we had to go. i made a quick run through the little lady clothes and almost peed my pants with excitement. all the new clothes they have are so adorable. like i wanted to put a thousand things in my cart. {dont fret sweet husband, i didnt.well i did, but i put it all back.}
i am hoping that she gets some of those sweet clothes for her birthday. 

so since we are having a sick day, i thought i would share with you a few of my favorite 'pins' as of late.

maggie eats.




maggie eats the weirdest food. 

and she eats it because i give it to her.

i do not want her to be a picky eater if i can help it so once i got the go ahead from her doctor to give her anything we eat, i went for it. she has tried tons of different things and she has not turned her nose to anything, until this week. she doesnt like egg whites. at all. she threw them all on the floor. anyways, i thought i might share with you all some of the recipes that i make for maggie girl to eat! 

one of her favorite things to eat is pumpkin or squash. when she was 6 months old the first thing i gave her was peas, followed by butternut squash. i mostly started giving it to her because i bought a bag of diced butternut squash at the grocery store and it was easy to steam and then blend in our magic bullet. maggie loved it. and she would eat it almost every single day. i then introduced her to pumpkin a few months later and last week i opened a can of pure pumpkin to make a homemade pumpkin spice latte {side note: if you have a good recipe for a PSL please send it to me. all the ones i have tried are not good.} and i thought, hmm, i know she will eat this, but how do i get creative with it? so, here are 3 easy recipes for pumpkin based baby foods! {i wish i was one of those cool bloggers who can take fabulous photos of the food they make, but i am not. aanndd our camera is acting up so all i have is my cell phone & those photos look terrible, so use your imagination. mmmkk? thanks.} 

 

ok, ok, that one was really simple. but a really big hit over here!





still easy, but a bit more creative. 


 this one was a huge hit. maggie loved every single bite.

our favorite mac & cheese

so, about 2 weeks ago i wrote a post about making dinner for my sweet friend heidi who had just had her little baby. in that post i promised that i would give y'all {can i say that if i am from seattle?!} my favorite mac and cheese recipe. it is paula deens creamy mac and cheese, and you can find the recipe here, or just follow my directions. it's super easy & really yummy. if you make it, let me know what you think!

this week i am going to have a lot of things to blog about! 


nick and i are doing something called 'redemption group' at our church and i really am looking forward to writing about it, but not today. because today i have mac and cheese in the crockpot {recipe coming soon!} and a peach pie in the oven. i have never ever in my life made a pie before. & i totally bought the pie crust. but thats ok, because i am making it all to take to my sweet friends who had a baby last week! 


in the meantime, here is the recipe for the peach pie that i used. minus the crust of course.

our favorite soup.

i have been meaning to post this recipe for a really long time! we eat this soup at least once a month! its so yummy! i have made this for tons of friends after they have had babies, or just because. its so easy!
nick likes his with bacon and extra cheese.

baked potato soup
::what you need::
6 russet potatoes, peeled and sliced
6 cups of chicken stock (3 cans)
2 tsp of black or white pepper
about 1 cup of shredded cheese (we use cheddar)
2 cups of milk
1 stick of butter
1/2 cup of flour

::directions:: 
bring stock to a boil and add white pepper and potatoes. cook until the potatoes are half done. using a microwave safe bowl, melt the butter. then add half of the flour and microwave 1 min. stir and add remaining flour. cook until it makes a thick paste, stirring after every minute. (should cook a total of 3 mins) add the microwaved mix to the soup a little at a time. add cheese and milk. turn down heat to a very low and simmer for about 15 mins. makes 1/2 gallon of soup.
garnish with:
sour cream
bacon
chopped chives
shredded cheese

three in one.

the past few days have been icky. totally gross. like, me not sleeping, maggie being a fussy pants, husband being busy, rain, depression, and a whole giant list of other things. lets just say, i am thankful to have hope, and that grace is continually poured on me and my family. also thankful that things seem to be going forward from here, and i am remembering to pull my strength from the LORD. so, with all that going on, i have become terribly behind on projet31 which makes me sad because i have been really enjoying it. so here are 3 posts packed into one.  in other news, i am really excited about the following things:
* its the month of love (my favorite)
*my husband is out getting ice cream so we can watch 'the social network'
* i took the best nap this afternoon.

 ( ps. any sleeping tips for new mamas? my sweet baby has been sleeping through the night for about 6 weeks now, and i am having the worst insomnia ever.so frustrating.)
day eleven

i dont have a picture(sorry!), but we eat this all the time! i got this yummy recipe from a friend, it is so easy and so good!
breaded ranch chicken
4 boneless skinless chicken breasts
1/2 cup of italian style bread crumbs
1/2 cup grated parmesan cheese
1/2 packet of hidden valley ranch dip mix
1/4 cup melted butter
*_*_*_*_*_*_*_*_*_*_*_*_*_*_*
combine bread crumbs, cheese and ranch mix in a shallow bowl. melt butter. dip chicken in the butter and then into the bread crumb mix. place in casserole dish that is lightly greased. bake at 350* for 45 mins or until golden brown.

i could write so much about this one, but because i am posting 3 days in one, i think i should keep it brief. i think that the thing that wears me out the most as a woman is the constant need to feel valued and accepted. i am in a constant state of anxiety and fear of man (and woman, mostly woman). i feel like i am never good enough, pretty enough, talented enough, smart enough, creative enough... the list goes on. i am so thankful that this is not what(or who) i am living for.

honestly. i am so selfish. i have talked about this so many times and i know that it will probably be a life long struggle for me. i would like to be more loving to those i dont know. i would like to think of myself less and others more. i would like to serve my husband and my family better. i would like to be a more thoughtful person. i would like to serve Jesus without thinking of myself and my own comforts. i would like to really kick selfishness in the bum and put it behind me. i would like to stop procrastinating and start being a better planner, stop complaning about pretty much everything under the sun,and to wholeheartedly serve and seek after my relationship with the LORD.  i do not know if those relate to selfishness, but they are definitely things i would like to change about myself for the better.
